Paye:
Paye is traditional food of Pakistan and India. It
is served on main functions or prepared for special guest and most used in
winters and people love to have it in breakfast.
Origin:
It is originated from south and central Asia. This
food was adopted by local cooks of Lahore and Hyderabad and vastly consumed
across the country and has some healthy benefits as well.
Recipe and ingredients:
The main ingredient of paye are hoof of goat, cow,
buffalo and some meet as well and it is consist of soup or curry with meat and
in veggies lesson, ginger, coriander with salt and some spices are needed to
cook them well.
If we talk about the recipe of paye which is different according to demographic location of people but all of them are very good or I can say somehow similar in taste like if you eat Lahore’s paye and then Hyderabad’s paye you feel the difference in taste due to spices there is no major difference in taste but still due to people preference taste of this delicious and juicy dish vary.
How you can easily cook Paye at your home? Well here's how:
1. First of all make sure you cleaned the hoof
neatly you can do it at home or butcher can do it for you but may charge some
extra amount for it. But If you want to save your money and want to do it
yourself than take a big pot and put water in it with hoofs and then flame it
until water boils when water start boiling leave it until water gets half of
the pot, take the hoof out with help of cloth or wear gloves because they will
be hot at that time after handling hoofs in hand strike it on a some hard
surface or you can use hammer to take off hoofs covers easily.
2. After first step now fill your cooker with water
and put cleaned and chopped hoofs in it and let it boil and put a little amount
of salt and coriander if you like and let it boil.
3. When boiling start after few minutes take out the
meat and hoofs and put them in a new pot and start frying it and now you can
add spices, little amount of salt, garlic, lesson and other ingredients
according to your preference.
4. After frying now put all the fried material again
in the cooker and mix it and let it mix well than put cooker on slow heat and
wait for its whistle and then check the cooker if meat is tender now than you
can put off the cooker from fire otherwise let it be on fire until the
tenderness in meat comes.
5. After the completion of all above mention steps
now you can put your delicious and juicy dish in a bowl and can eat it with
bread or with fresh Roghni Naan and enjoy the your meal.

people from different cities come to Lahore just to try "Phajay kay Paye" because
they are indeed so tasty. Siri paye is a variation in which the head of animal
and foots both are included which is also tasty and full of fats.
